creamy 'feta' pasta

It's all over tik tok (which we haven't quite mastered yet) and the 'gram so we took a little bit of this and a little bit of that and created our own version of the Feta Pasta craze. I have to say, it turned out AMAZING! Of course we added some extra veggies because #eatmoreplants and it's not entirely "whole food" because we did use Violife's Just Like Feta, but you can also make a whole food, plant based feta if you prefer or even use the real deal; you do you! No judgement here.

INGREDIENTS

  • 8.1 oz. Violife's Taste Like Feta

  • 1 pint grape tomatoes

  • 3 garlic cloves

  • 1 med red onion, cut into quarters

  • 1 tsp oregano

  • 1 tsp dried basil

  • 2 tsp garlic powder (we love Garlic Lovers by Flavor God!)

  • 3 tbsp nutritional yeast, divided

  • 1-2 tbsp extra-virgin olive oil

  • 16 oz Whole Grain Rigatoni Pasta (or pasta of choice!)

  • 1/4 c reserved pasta water

  • 1/2 c sundried tomatoes (not in oil!), chopped

  • 1/2 c kalamata olives, sliced

  • 3 big handfuls of baby spinach



DIRECTIONS

  1. Preheat oven to 400 degrees F.

  2. Place the feta block in a rectangular casserole dish. Add in the pint of grape tomatoes, red onion, oregano, basil, soffrito seasoning blend, garlic powder, garlic cloves, 2 tbsp nutritional yeast, and drizzle with 1-2 tbsp olive oil.

  3. Place casserole dish into the oven to bake for about 20 minutes or until the tomatoes burst and the feta is bubbling.

  4. While the feta is baking, prepare the rigatoni according to the package directions. When the pasta is done, reserve 1/4 c of the pasta water before draining then set aside.

  5. By now, your feta should be a vision of melty deliciousness. Carefully remove it from the oven and when it's cooled enough, scoop the melted cheese mixture into a high-speed blender, add the 1/4 c of reserved pasta water and remaining 2 tbsp of nutritional yeast. Blend until smooth.

  6. In a large bowl, toss together the pasta, creamy feta sauce, spinach, sundried tomatoes & kalamata olives. Top with additional nutritional yeast if you'd like some extra nutty, cheesy flavor.

  7. Enjoy!
